Rosemary Maple & Chile Party Nuts
Yields: 3 ½ cups (serves 12-14)
Olive oil spray
1 ½ cup unsalted cashews
1 cup unsalted walnuts
1 cup unsalted pecans
1/3 cup maple syrup
3 tablespoons freshly squeezed orange juice
2 teaspoons kosher salt (omit if any of the nuts are salted)
¼ teaspoon ancho chile powder
½ teaspoon smoked paprika
½ teaspoon nutmeg
¼ teaspoon cinnamon
3 tablespoons fresh rosemary, chopped
1. Preheat oven to 350?.
2. Lightly spray baking sheet with olive oil.
3. In large bowl, combine nuts, maple syrup, orange juice, salt, spices and 1 ½ tablespoons rosemary. Toss to coat nuts evenly.
4. Spread nuts onto one layer on the baking sheet. Drizzle on any remaining liquid and spices from the bowl.
5. Roast for 25 minutes, stirring once after 8 minutes and again after 16 minutes. Remove when nuts are golden brown and sprinkle remaining 1 ½ tablespoons rosemary. Before cooling, toss well. As they cool, stir occasionally to prevent sticking.
